Introduction

Ingredients
- 200 g basmati rice
- A good pinch of saffron threads
- 3 tbsp warm milk

Preparation
Prepare the saffron
- Heat the milk: Gently heat 3 tablespoons of milk and add the saffron threads. Leave to infuse for about 15-20 minutes until the milk turns a rich golden color.
Wash the rice
- Rinse the rice: Rinse the basmati rice thoroughly under cold water until the water runs clear. Then leave the rice to soak in cold water for about 20 minutes.
Fry the onion
- Heat the butter: Heat 2 tablespoons of butter or ghee in a pan. Add the chopped onion and fry over a medium heat until golden brown and caramelized.
Toast the rice
- Add the rice: Drain the soaked rice and add it to the caramelized onions. Fry the rice for 2-3 minutes, stirring constantly, until lightly toasted.
Add the saffron milk
- Stir in the saffron milk: Add the saffron milk to the rice and stir well. Allow the milk to reduce completely.
Add the cooking liquid
- Add water or stock: Pour 4 cups of water (or broth) into the pot and bring to a boil. Add salt to taste.
Cook rice
- Reduce heat: educe the heat to a minimum, cover the pot and let the rice simmer gently until tender and cooked. This usually takes about 15-20 minutes. Do not remove the lid during cooking to keep the steam in the pot.
Optional: Add raisins or almonds
- Raisins or almonds: If you like, you can add raisins or chopped almonds now and gently fold them in. The raisins will soak in and lightly toast the almonds.
Leave the rice to rest
- Leave the rice to rest: Once the rice is cooked, remove the pan from the heat, cover and leave to rest for a further 10 minutes. This will help the rice to cook evenly and release the flavors.
